Day 95 - 6 October 2005 oh the food! so honestly, the food here isn’t usually any sort of delicacy or made with much intricacy, of course, due to the lack of resources. for some reason the past few days have been quite delectable dinners if i do say so myself. or maybe the novelty of bein part of makin them makes me more proud thus accentuating the delectability of the food. so check this... Monday roomie made his own variation of this CVean dish called Feijoada. it’s sorta like a stew with red beans, carrots, green peppers, onions, garlic, a li’l tomato paste, and he added some sweet potatoes to mix it up since he heard somewhere that sweet potatoes actually have the highest density of nutrients of any vegetable. and yes, he bought a truckload of them of course. Tuesday i attempted to make my own BBQ sauce with ketchup, tomato paste, onions, garlic, honey, and a dash of vinegar...and i succeeded...after simmerin with the cubed pork for a good while, it turned out better than ever! well...better than last time at least...so we had BBQ pork sandwiches and my roomie taught me how to make Roplinhada (dunno if that’s spelled correctly), which is cabbage stewed in water with a li’l tomato paste and olive oil with onions & garlic...such a tasty meal it was! (and yes, this is me getting excited over the li’l things). Wednesday with the rest of the pork cubes we decided to make spits (shpitz) or kabobs with green peppers & onions. i marinated the meat in honey, hot sauce, salt, pepper and a dash of olive oil. roomie whipped up some mashed sweet pototatoes and a chicken gravy. again i think to myself, am i really eatin like this in Africa?!?!? Thursday today we took on the east asian iron chef with our very own egg rolls and fried rice...made our own wrappers & filling from scratch. even grew our own rice (j/k...you woulda believed me tho huh?) took a long time to complete this one, but was definitely worth the effort. so as you can see, with low resources, we’re really suffering out here in posh corps. hey, somebody’s gotta suffer...(we’re just not those people.) <--- quit it                Janela ---> |
